This is a super moist (better the 2nd day if
it lasts that long)...cake..super easy and oh
so good:
List of Ingredients
4 eggs
2 cups white sugar
1 cup veg. oil
2 cups white flour
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 cup WELL (squeeze-drained)crushed pineapple
1/2 cup chopped pecans
2 cups grated zucchini (squeezed dry then
blotten between towels)
2 tsp. vanilla
1 tsp. butter extract (flavoringRecipe
Beat eggs & sugar till lemon colored; add oil
and beat well. Add the dry ingredients and
beat for 2 minutes. Stir in fruit, zucchini,
nuts and extracts. Mix thoroughly. Pour into
well greased and floured 10" tube pan. Bake
at 350° for 1 hour 20 minutes. Cool (in the
pan) on a rack for 30 minutes before you
remove cake from pan. Glaze with light simple
vanilla glaze while still warm. Cool before
cutting. Store covered.
