    List of Ingredients




    CAKE: 2 cups white sugar
    1 cup vegetable oil
    2 eggs
    3 cups all-purpose flour
    ¾ cup unsweetened cocoa
    2 tsp baking soda
    2 tsp baking powder
    1 ½ tsp salt
    1 cup hot coffee or hot water (I’ve always used coffee)
    1 cup buttermilk or sour milk

    FILLING: ¼ cup white sugar
    1 tsp vanilla
    1 250g pkg cream cheese, softened
    1 egg
    ½ cup flaked coconut
    1 6oz pkg chocolate chips (what is that – 1 cup??)

    GLAZE: 1 cup icing sugar
    3 tbsp unsweetened cocoa
    2 tbsp margarine
    2 tsp vanilla
    2 tbsp hot water

    Recipe



    Prepare the filling first. Blend all ingredients and set aside.
    For the cake, combine sugar, oil and eggs; beat 1 minute @ high speed, add remaining ingredients and beat at medium speed for 3 minutes.
    Pour half the batter into a greased and floured bundt pan. Spoon the filling over the top; add the rest of the batter. Bake @ 350º for 1 hour; cool and invert on plate. To glaze, combine ingredients and drizzle over. (I find this drizzles down quite a bit, so a plate somewhat larger than the cake is a good idea. That way everyone gets to scrape some of the glaze off the plate!)

    There is no standard test to see if this is done. I bake for 1 hour exactly, and it has always been wonderful. This is really a delicious cake.
