List of Ingredients
3 eggs
1 cup sugar
2/3 cup pumpkin
1 TBSP. lemon juice
1 tsp. baking powder
3/4 cup flour
3 TBSP cinnamon
1 TBSP. ginger
1&1/2 tsp nutmeg (I use less)
1/2 tsp.salt
1 cup pecans -- crushed
powder sugar
Filling (recipe follows)

Line a 15x10x1 jellyroll pan with wax paper.
Beat eggs on high 5 min. Gradually beat in sugar. Stir in pumpkin and lemon juice. Combine all dry ingredients. Fold flour mix into pumpkin mix. Spread onto jellyroll pan. Top with nuts. Bake @ 375 for 15 min. Turn cake onto a dishtowel that has been dusted with powder sugar. Roll Cake and towel together and cool. When cool unroll cake and spread with filling. Reroll without towel and sprinkle with powder sugar

1 cup powder sugar
6 oz. cream cheese--softened
4TBSP butter
1/2 tsp. vanilla
