List of Ingredients
2 cups all purpose flour
2 cups sugar
½ tsp salt
1 tsp baking soda
2 tsp cinnamon
3 eggs
¾ cup vegetable oil
2 cups finely grated carrots
1 tsp vanilla
1 cup well drained crushed pineapple
1 cup coconut-------------optional
½ cup raisins
½ cup nuts, optional
Recipe
In mixing bowl, combine dry ingredients. Add eggs, oil, carrots and vanilla, beat until combined. Stir in pineapple, coconut, raisins and nuts if desired. If the batter seems too stiff, add a little bit of the drained pineapple juice or milk. Pour into greased 9 X 13 cake pan. Bake at 350 degrees for 55-60 minutes or until cake tests done. Cool completely then frost with cream cheese icing.
Cream cheese icing
Half of 250 gr pkg cream cheese, softened
¼ cup marg. Softened
1 tsp vanilla
2 cups icing sugar
Beat first 3 ingred well, until smooth. Add icing sugar a tablespoon at a time until it is all mixed in. Whip at high speed until shiny and creamy. Spread on cake. I usually make more than this, to make a nice deep icing for the cake.
