Recipe Introduction
Posted by: 3dogmom This is a great recipe for those who must avoid eggs, but moist and delicious for all the rest of us, too! Another winner that I cut from the newspaper many years ago
List of Ingredients
1 cup raisins
Water
1 1/2 cups sweetened applesauce (I use 1-16. oz can)
2 tsp. baking soda
1/2 cup vegetable oil or melted vegetable shortening (I use oil)
1 cup sugar (I use 1/2 cup brown sugar and 1/2 cup white)
2 cups flour (for more nutrition, I sometimes replace 1 cup of the white flour with 7/8 cups, ie. 14 Tbsp., of whole wheat flour)
1 tsp. ground cloves
1 tsp. ground nutmeg
1/2 tsp. salt
1 cup chopped walnuts or pecans
Powdered sugar for dusting
Recipe
Preheat oven to 350 degrees.
In a saucepan, cover raisins with water. Bring to a boil to plump the raisins. Drain raisins and set aside.
In a 5 quart saucepan, heat applesauce. When hot, stir in the baking soda until dissolved. Stir in the remaining ingredients, including raisins. Pour into a greased and floured 9 inch square pan. Bake in a preheated 350 degree oven for 35-40 minutes, or until it tests done with a toothpick. Cool in pan and dust with powdered sugar, if desired. Cut into squares and serve.
