List of Ingredients
1 cup butter, or margarine
2 cups sugar
5 eggs (separated)
2 cups flour, sifted 2 times
1 tsp. soda
1 cup buttermilk
1 tsp. vanilla extract
1 tsp. coconut flavor
1 (3-1/2 oz.) can coconut
1 cup chopped nuts (walnuts or pecans may be used)
Recipe
Separate eggs and beat whites until stiff. Set aside. Cream margarine, and add sugar. Add egg yolks one at a time, beating well after each addition. Dissolve soda in buttermilk, add alternately with flour, add coconut, nuts and extracts.
Pour batter into 3 (9-inch) cake pans. Bake at 350 degrees for 25 minutes.
Cream Cheese Frosting
1 stick oleo
1 pkg. (8 oz.) cream cheese
1 lb. powdered sugar
1 tsp. almond extract
Combine ingredients and beat well. Spread between layers and on top of cooled cake.
You can bake the cake in a 9x13 pan, but increase the the oven temp to 375 degrees and bake for 45 minutes. You can omit the coconut flavoring, if desired.
In the frosting, you can use vanilla instead of almond extract, if desired
