Old-Fashioned Apple Cake w/ Brown Sugar

This cake is an old, old favorite of mine. Just reading the recipe, it doesn't seem the finished product would be anything particularly exceptional. But this is a case where the whole is definitely more than the sum of the parts. The moist, semi-chunky cake, spread with the frosting equivalent of brown sugar fudge, is perfect served with a cup of coffee or, better still, a glass of ice-cold milk
List of Ingredients
2 1/3 cups King Arthur Unbleached All-Purpose Flour
2 cups granulated sugar
2 teaspoons baking soda
3/4 teaspoon salt
1 1/2 teaspoons apple pie spice
2 eggs
1/2 cup shortening
4 cups peeled, chopped apples
1 cup walnuts, chopped
Recipe
Mix all ingredients, except apples and walnuts, in a large bowl. Beat until well combined. Fold in apples and walnuts.
Turn batter into a greased and floured 9 x 13-inch pan. Bake in a preheated 325°F oven for 45 minutes, or until cake tests done. Remove pan to wire rack, and cool completely; don't remove cake from pan. When cake is completely cool, frost with Brown Sugar Frosting.
Brown Sugar Frosting
5 tablespoons butter
1/2 cup firmly packed brown sugar (light or dark)
3 tablespoons milk
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla
Melt butter in a small pan over medium heat. Stir in brown sugar, and cook, stirring, until sugar melts. Add milk, bring to a boil, and pour into a mixing bowl to cool for 10 minutes.
After 10 minutes, stir in confectioners' sugar and vanilla. Beat well; if mixture appears too thin, add more confectioners' sugar. Spread on cake while frosting is still warm.
