List of Ingredients
3/4 c. flour
1 t. baking powder
2 t. cinnamon
1 t. ginger
1/2 t. nutmeg
sprinkle salt
2/3 c. cooked pumpkin
1 t. lemon juice
3 eggs
1 c. sugar
Filling:
1 c. powdered sugar
2-3 oz. pkg cream cheese
4 T. butter
1/2 t. vanilla
Recipe
Sift together the first 6 dry ingredients. Set aside. Beat eggs until thick. Gradually beat in sugar. Stir in pumpkin and lemon juice. Fold dry ingredients into pumpkin mix. Spread in greased and floured 15 x 10 baking pan. Preheat oven to 375 degrees and bake for 15 minutes. Loosen edges and turn out immediately on a towel sprinkled with powdered sugar. Roll towel and cake together, cool and unroll.
Filling: Mix all ingredients with mixer and spread on unrolled cake. Roll and chill. Cut cake into pieces.
