Posted by: BobbiJo_AZ********I think the secret to good carrot cake is one that produces a moist cake, AND one that is covered and refrigerated AFTER BAKING This allows the cake to "mellow" before it is served
List of Ingredients
3 eggs
3/4 cup cooking oil
3/4 cup buttermilk
2 tsp. vanilla
2 cups sugar
2 cups flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 cups finely shredded carrots
1 cup chopped walnuts
1 cup crisp rice cereal
1 cup coconut
1/2 cup drained, crushed pineapple
Recipe
In a large mixer bowl combine eggs, oil, buttermilk and vanilla. Add sugar and beat to mix well. Sift together the flour, baking soda, cinnamon and salt. Beat in at medium speed for one minute. Add remaining ingredients and mix well. Pour mixture into a greased and floured 13 x 9 x 2 inch baking pan. Bake at 350 degrees F for 40 to 45 minutes or until a toothpick comes out of center clean. Cool and then cover and refrigerate overnight.
Frost with cream cheese.
