    RUBY'S DEEP FRIED CANDY BARS

    List of Ingredients




    Chill desired candy bars in refridgerator over night. You may use full size bars or miniature. Smaller bars will cook faster.

    1 1/2 hours before frying prepare batter.
    1 2/3 cups unsifted flour
    1/4 teaspoon salt
    3/4 teaspoon baking soda
    1/2 teaspoons cream of tarter
    2 tablespoons sugar
    1 egg
    1 cup milk

    Combine dry ingredients in medium bowl. mix together.

    In seperate bowl whisk egg with milk until smooth.

    Dump the milk and egg into bowl of dry ingredients and stir well until there are no lumps(the batter will be twice as thick as pancake batter).

    Cover and chill for at least an hour.

    Heat enough oil to deep fry in deep pan or deep fryer until it reaches 375 degrees. Prepare a cooling and draining station using a rack over a baking sheet with paper towels.

    Dip candy bars in batter covering completely. ONLY FRY ONE AT A TIME. DO NOT USE DEEP FRY BASKET AS BARS WILL STICK TO BASKET AND YOU WILL NEVER GET THEM FREE. DROP THEM GENTLY INTO PAN.

    Fry for about 2 1/2 minutes until nicely browned. use slotted spoon or tongs to remove to rack. let cool for one minute. REMEMBER SMALLER BARS WILL COOK QUICKER.

    When all candy bars have been fried, put remaining batter in zipper bag and snip off corner. hold over oil and drizzle into oil using desired pattern. fry until browned on bottom. flip and continue frying until brown. remove to rack to cool. dust with powdered sugar or top as desire and you have a FUNNEL CAKE.
