List of Ingredients
6 cups zucchini (peeled, seeded, and grated)
6 cups sugar
½ cup lemon juice
1 cup undrained crushed pineapple
2 three-ounce packages of cherry jello
Recipe
Boil zucchini for 12 to 15 minutes or until clear. Add sugar, lemon juice, pineapple. Boil together with zucchini for 6 minutes. Remove from heat and add cherry jello. Put into jars and seal. Makes 4 pints.
Variations to use with above:
Orange Zucchini Jam
Grate rind of 4 oranges. Put orange pulp in blender and blend well. Pour off juice and use ½ cup of this mixture in place of lemon juice. Add 2 or 3 packages of orange jello. Be sure to boil the pulp mixture with zucchini for 6 minutes.
Apricot Zucchini Jam
Using the cherry zucchini recipe, omit the 2 boxes of cherry jello and substitute 2 boxes of apricot jello.
