2 pounds pickling cucumbers, thinly sliced
1 large onion, thinly sliced
2 cups white vinegar
1/2 cup honey
2 garlic cloves, minced
1/2 cup oil
8 sprigs fresh dill or 1 tsp. dill seed
Recipe
layer cucumbers and onion in small freezer containers. in medium bowl, whisk together vinegar, honey and garlic. Slowly whisk in oil and blend well. Distribute dill sprigs or seeds equally on top of cucumbers. pour liquid into containers, leaving one-half inch head space. Add more vinegar if necessary to cover cucumbers. Cover tightly and freeze. To serve, defrost in refrigerator. Makes 2 qts.
