List of Ingredients
1/2 Lb. pork sausage
4-6 medium yellow squash, peeled and diced
1 small onion, diced
1/2 cup sour cream
1/3 cup shredded monterey jack cheese
1/3 cup cubed Velveeta cheese
1/3 cup shredded cheddar cheese
1/3 cup butter, melted
1 egg, beaten
1/8Tsp. pepper
1/4Tsp. paprika
16 Ritz crackers, crumbled
Recipe
4-6 servings
Brown sausage, drain and set aside.
Spray a 9 X 13 baking pan with non-stick spray and set aside.
Melt butter, mix in sour cream and all cheeses. Add pepper and paprika. Fold in squash and onions. Stir in cooked sausage. Turn mixture into prepared baking pan.
Cover with crumbled crackers and dot with little pats of butter. Bake uncovered at 350 until golden brown, about 30 to 35 minutes.
