List of Ingredients
8 medium zucchini, trimmed, cleaned and blanched
> 1/2 cup butter
> 2 T. olive oil
> 1/2 t. white pepper
> 2 T. melted butter
> 1/2 t. salt
> 1 cup Parmesan cheese, grated
Recipe
Cut zucchini into 1/2" slices, crosswise and dry thoroughly on paper
> towels. Preheat oven to 425. Grease large baking dish with a teaspoon of
> butter. In large skillet, melt remaining butter with olive oil over medium
> heat. When foam subsides,add zucchini slices to pan and cook for 3
> minutes. Stir occasionally to prevent sticking. Add salt and pepper.
> Remove from heat. Sprinkle bottom of baking dish with 1/4 of the grated
> cheese. Cover cheese with layer of zucchini slices and top with another
> 1/4 cup of grated cheese. Sprinkle 1 T. butter over the cheese. repeat
> layers until all zucchini and cheese has been used up, then pour remaining
> butter over. Bake in top part of oven for 15 minutes or until cooked land
> tender. Serve at once. Serves 4
