List of Ingredients
1 cup long grain and wild rice (Uncle Ben’s Long Grain and Wild Rice Original Recipe in the 6 oz. orange colored box)
1/2 cup chopped white onion
1/2 cup butter
1/4 cup flour
1 can 4 oz. mushrooms
chicken broth
1 ½ cups half and half
3 cups diced cooked chicken (I use 3 large boneless/ skinless chicken breasts)
¼ cup chopped pimento
2 Tbsp chopped fresh parsley
1-1/2 tsp salt
1/4 tsp pepperRecipe
Prepare rice according to box instructions. Drain mushrooms--keep liquid. Cook onion in butter. Stir in flour. Use mushroom liquid and chicken broth (this is the broth that you cooked your chicken breasts in) to equal 1-1/2 cups. Stir into flour mixture. Add half-and-half. Cook and stir until mixture thickens. Add all of the other ingredients and bake at 350* for 25-30 minutes.
*Her note: Please use the half-and-half when making this recipe it will only add to the delicious richness of the dish
