St. Louis, MO*************I served it with mashed potatoes, but it would have been even better over fetuccini noodles. I grilled the kabobs rather than broiling them as the recipe states. The taste was very unique and different. This would be a perfect meal to prepare ahead of time to allow to marinate and throw on the grill at meal time.
List of Ingredients
6 - 8 oz. boneless chicken breasts cut into 1" pieces
1 cup olive oil
1 cup white wine
1/2 cup parmesan cheese
1/2 cup bread crumbs
1/2 teas. salt
1/2 teas. black pepper
1/3 teas. red pepper
2 Tbs. parsley
1 T. minced garlic cloves
Sauce:
1 stick melted butter
1 cup lemon juice
Recipe
Place all ingredients (except butter & lemon juice) in a large bowl and marinate for 1 hour. Place the chicken on skewers and broil for 8-10 minutes.
Prepare sauce by infusing together butter & lemon juice. Ladle over the cooked chicken and serve.
Serves 6.
My changes: the recipe called for a pound of butter! EEK! It also did not call for garlic, and I added several fresh cloves, minced. We grilled the chicken skewers outside instead of broiling.
Very tasty, Arlene! And really simple to fix. I made the chicken mixture early in the day, not 1 hour ahead. Great with a side of pasta, salad and bread!
