List of Ingredients
1/4 cup flour
1/2 tsp pepper
4 small bone in chicken breats halves, skin removed about 1-1/2 pounds)
1/4 cup Kraft Done Right Zesty Italian Reduced Fat Dressing
2 Cups of baby carrots( used regular carrots and cut into small coins)
1 medium onion, cut into wedges
14-1/2oz can of fat free, reduced sodium chicken broth, divided( used regular)
2 cups of Minute brown rice, uncooked
4-oz of Philadelphia Neufchatel Cheese or 1/3 less Fat cream cheese, cubed( used 1/3 less fat)
2 Tbs chopped parsley
My additions( 1 cup of sauteed mushrooms and 1 tsp dried thyme and I used about 2 cups of dried uncooked noodles)
Recipe
Mix the flour and pepper in a shallow dish. Add the chicken to coat. Shake off excess flour. Heat the dressing and saute the chicken in the dressing for 5-6 minutes, turn over and add the carrots and onions and 1 cup of the broth. Reduce the heat and simmer for 20 minutes.Cook the rice according to the package directions. Place the rice onto a serving platter and place the chicken and vegtables over the rice. Add the remaining stock and cream cheese cubes to the skillet and cook till the cheese has melted and is well blended. Reduce the heat and simmer for 3-5 minutes.
Spoon the sauce over the chicken and vegtables and sprinkle with the parsley~~ Substitute bone-in chicken thighs for the chicken breasts( skin removed)
I added the mushrooms and thyme after the sauce simmered for 3-5 minutes and I cooked it covered for about another 10 minutes~
