    List of Ingredients




    1 lb. ground beef
    2 Tbsp olive oil
    1 lg. onion, chopped
    1 med. green pepper, chopped
    2 jalapeno peppers, 1 seeded and both chopped
    2 stalks celery, chopped
    1/2 small head cabbage, finely sliced
    1 10 oz can Ro-Tel tomatoes & peppers
    1 14 1/2 oz can petite diced tomatoes
    salt & pepper to taste
    1 1/2 C fresh bread crumbs (I used whole wheat bread)
    1 C shredded colby Jack cheese

    Recipe



    Heat olive oil in a large skillet. Add onion, green pepper, jalapenos, and celery. Saute until onion is tender. Add ground beef. Cook until the ground beef is browned. Drain. Return to skillet. Add the sliced cabbage. Cook stirring frequently for 10-15 minutes or until the cabbage is tender. Add the Ro-Tel, diced tomatoes, and salt & pepper. Heat through. Put 1/2 of meat mixture into a casserole. Top with 1/2 of the bread crumbs. Add the remaining meat mixture and top with the remaining bread crumbs. Bake at 350° for 30 minutes. Remove from oven and add the cheese. Put back into oven and cook about 15 minutes more.

    When I make this again I think I'll put a couple of teaspoons of chili powder in the meat mixture.
