Plantation Stuffed Peppers

List of Ingredients
1 lb. ground beef
1 c. onion
2 cloves garlic, minced
2 tsp. chili powder
1 tsp. salt
1/2 tsp. pepper
2 cans tomato soup
8 oz. sharp cheddar, shredded
1 1/2 c. cooked rice
8 bell peppers
Recipe
Remove tops of peppers and remove ribs and seeds. Blanch in boiling water for about 3 minutes, then drain. Brown the ground beef with the onion and garlic. Add the seasonings and soup and simmer for 10 minutes. Add the cheese and stir to melt. Mix in the rice. Stuff your peppers with the rice mixture and bake at 400* for 30-45 minutes.
***These can be wrapped and frozen before baking.
