List of Ingredients
MARINADE
2 T.olive oil
2 T.packed brown sugar
1/2 t.oregano
1/4 t.salt and pepper
2 T.red wine vinegar
1 t.finely chopped garlic
1 bay leaf
MEATS and VEGETABLES
1 lb. round steak;cut into strips
1 T.olive oil
1 cup zucchini,sliced
1 cup yellow squash,sliced
1 cup onion, thinly sliced & into ring
1/4 cup fresh parsley
cooked egg noodles
Recipe
In a med. bowl stir together all marinade ingredients. Add beef strips; let stand 10 mins. Meanwhile ,in a 10 inch skillet heat 1 T. oil; add squash,zucchini and onion rings. Cook over med. heat stirring occasionally, until vegetables are crispy tender (3 to 5 mins.) Remove from skillet ; set aside. In same skillet place the beef strips;reserve the marinade. Continue cooking, stirring occasionally, until meat is browned (3 to 5 mins.) Stir in squash mixture and the reserved marinade. Reduce heat to mediumn;and continue cooking until heated through. Remove the bay leaf. Sprinkle with parsley and sreve over cooked noodles. Makes 4 servings
Note: This is a meal in its self and I usually serve it with a crusty bread and a glass of ice tea.
