Southern Living's Chicken Cobbler Casser

List of Ingredients
6 Tbsp butter
4 cups sourdough bread, cubed
1/3 c grated Parmesan cheese
2 Tbsp chopped fresh parsley (I used 1 Tbsp dried parsley)
2 medium sweet onion, sliced (I used 1 large, thinly sliced)
8 oz fresh sliced mushrooms
1 c white wine (I used apple juice)
1 can cream of mushroom soup
1/2 c roasted red peppers drained and chopped (did not use)
2 1/2 c cooked shredded chicken (2 chicken breast I used yielded 4 c chopped)Recipe
Toss 4 Tbsp melted butter with next 3 ingredients and set aside.
Saute onions in remaining butter in large skillet for about 15 mins until golden brown. Add mushrooms and saute about 5 mins.
Stir in wine and next 3 ingredients; cook, stirring constantly for 5 mins or until bubbly. Spoon mixture into a 9" square baking dish (I used a 9x13 dish.) Top evenly with bread mixture.
Bake at 400º for 15 minutes or unitl golden brown.
I served with baby peas and applesauce.
