List of Ingredients
1 Cup brown sugar
1 TB cornstarch
1 (19-oz.) can Las Palmas Enchilada Sauce ( I don't use the Enchilada Sauce I use their Red Chili Sause (Hot) instead)
1 to 1½ lbs. smoked sausage, cut into ½-inch thick slices (I use Polska Keilbasa)
1 (20-oz.) can pineapple chunks, drained
Recipe
1. In 3-quart saucepan, combine brown sugar and cornstarch. Stir in enchilada sauce: bring to a boil over medium heat.
2. Stir in sausage and drained pineapple. Bring to a boil, reduce heat and simmer 15 minutes.
3. Allow to cool slightly. Serve with toothpicks as appetizers. Or for a complete meal I pour over cooked white rice.
