List of Ingredients
4 large zucchini (about 2 1/2 lbs)
1/2 C chopped onion
1/4 tsp pepper
2 C toasted bread cubes (1/2" dice)
2 8oz cans tomato sauce
1 lb ground beef chuck
1 tsp salt
1/4 tsp chili powder
1 C shredded sharp Cheddar cheese
1/2 C water
Recipe
Wash and peel zucchini. Dice half of the zucchini and slice the remainder. Brown beef and onion and add the seasonings. Mix with bread cubes, diced zucchini, 1/2 C cheese, and 1 can tomato sauce. Spoon mixture into a buttered 1 1/2 quart casserole. Arrange sliced zucchini on top and sprinkle with remaining cheese. Mix other can of tomato sauce with water and pour over the casserole. Bake at 350° oven for 45 minutes. Uncover and continue baking until zucchini is tender, about 15 minutes longer. Serves 6
I used about 1 1/2 tsp salt, 1/2 tsp pepper, and 1/2 tsp chili powder. I also added 1 tsp garlic powder. This was still very bland. The top layer needs some seasoning. I think it would really be better with spaghetti sauce and the added seasonings. I think increasing the chili powder will help and as I said that top layer needs at least salt and pepper I'm going to play with this as it's a good way to use up those larger zucchinis.
