List of Ingredients
3 lbs beef chuck roast, well trimmed
8 whole garlic cloves
1 small green bell pepper, quartered and cleaned
2 large carrots, cut into thirds
3 ribs celery, cut into thirds
1 cup fresh parsley sprigs
2 bay leaves
1/4 cup instant beef broth granules(optional)
1/2 tsp black pepper
3 quarts hot water
1 (1 lb) pkg medium or thin egg noodles
1/2 cup fresh parsley for garnish
Recipe
Preheat the oven to 325 F. Place the meat in a large dutch oven or heavy roasting pan with the rest of the ingredients, except the noodles and parsley for garnish. Cover and bake for 3 hours. Remove the pan from the oven and transfer the meat to a cutting board. Scoop all the veggies out of the broth and discard. Keep broth. Shred meat into bite size pieces. Return to broth. Stir in uncooked noodles. Cover the pan and return to oven. Bake 1 hour and 15 minutes or until noodles are tender. Stir once during this time, be careful not to break up the noodles. If Noodles have absorbed the broth...just add more water or broth. Sprinkle with fresh parsley just before serving. This goes great with homemade mashed potatoes. Makes 12 servings.
