Macaroni and Cheese With Tomatoes

I took rosies warning seriously and made only 1/2 of this recipe.However I did sneak back into it while waiting for it to cool down so I could wrap and save for today~ Yea Right~ End of story~ This was very good and tasty. I have always loved the idea of mac and cheese with tomatoes, but never made them together. This will be a standard dish to serve with fish from now on~
Nice and creamy and I mixed up some fresh breadcrums and parm cheese and a little cayenne pepper for the topping ~ It really is a 4 ingredient no brainer that will satisfy that yern for something hot and cheesy
List of Ingredients
3 cups of cooked macaroni
28-oz can of tomatoes,cut into pieces and the juice as well
1/2 tsp garlic powder
Rosie also uses 1 tsp dry onion powder( me too)
2 cups of shredded sharp cheddar cheese, ( save 1/2 cup for the topping)
Recipe
Mix all exceptfor the reserved 1/2 cup of cheese. Mix well and place into a 2 Qt greaded casserole dish.
Bake uncovered for 45 minutes at 350. Sprinkle with the remaining cheese and bake for a few more minutes~
I put this together as directed, but also added the extra cheese on top and also added a mixture of fresh bread crums and a little parm cheese tossed with a few sprinkles of chili powder~ Mine baked for about 30 minutes as it was only 1/2 of the recipe~
Rotel tomatoes would be wonderful in this recipe as well as some stewewd tomatoes with garlic or Italian style tomatoes~`
Jack cheese with Jalapenos would be equally as good~
