    List of Ingredients




    1lb skinless boneless chicken thighs
    1/2lb hot or mild Italia sausage, skinned and sliced
    2 red, yellow or green peppers, sliced
    1 medium onion chopped into wedges
    1 16oz can tomtoes, undrained
    1/2 cup dry wine, red or white
    1 tsp Italian seasoning
    1/2 tsp salt
    1/4 tsp pepper
    1 tbsp cornstarch
    1/4 cup tomato juice


    Recipe



    In large skillet, cook sausage for 5 minutes, browning on all sides. Remove from pan. Cut chicken into bite sized pieces and brown in the same pan for 2 - 3 minutes. Remove chicken from pan and add peppers and onion and saute in remaining drippings for 3 minutes. Return sausage and chicken to the pan. Add the tomatoes, wine and seasonings. Bring to the boil reduce heat and simmer for 10 - 15 minutes. Stir the cornstarch into the tomato juice and add to skillet, stirring. Cook and stir until mixture is thickened and bubbly. Continue to cook for another couple of minutes and serve over your choice of hot pasta.
    Serves 4.
