PENNE WITH SPICY VODKA TOMATO SAUCE

1/4 cup olive oil
4 cloves garlic -- minced
1/2 teaspoon hot red pepper flakes
1 28 oz. can plum tomatoes
1 pound penne pasta
2 tablespoons vodka
1 cup whipping cream
Recipe
In unheated skillet large enough to hold the pasta later, combine oil, garlic, hot pepper flakes and a pinch of salt, stirring to coat with oil. Cook over moderate heat just until the garlic turns golden but does not brown, 2-3 minutes. Crush the tomatoes and add UNDRAINED. Stir to blend and simmer, uncovered, until sauce begins to thicken, about 15 minutes. Taste for seasoning. Meanwhile bring a large pot of salted water to a boil. Add penne and cook until tender but firm to the bite. Drain. Add pasta to tomato sauce and toss. Add vodka and toss. Add cream and toss. Let rest for 1-2 minutes to let pasta absorb sauce.
