    Comments: this makes a great side dish for just about any meat. Make ahead and just pop in the oven. Do allow a little more baking time if you make ahead. Let it bake covered for the first 15 minutes or so, and then uncover and finish baking the 30 minutes. Also buy a bag of 2 cups shredded cheese, like the Mexican blend or any other combinations. Sprinkle chives if you like. Just play around with it.
    This is also easy to cut in half.

    List of Ingredients




    6-8 medium potatoes, cubed, parboiled (do not cook these til they are done)
    2 oz. Oscar Mayer Real Bacon Bits
    2 c. sour cream
    2 c. finely shredded mild cheddar/ mozzarella cheese mix
    salt & pepper to taste
    onion powder to taste
    garlic powder to taste
    chives, optional

    INSTRUCTIONS:
    Oven 350
    Cut potatoes into 1 in cubes. Parboil. For just about 10-15 minutes. Do not cook til done. Pour into colander. Let cool. While these are cooling mix the bacon with the sour cream. When the potatoes are cooled, gently mix with sour cream. Then add about 1 1/2 cups cheese. Put in seasonings to taste.
    Put into a 9x12x2” cake pan that has been sprayed with a non-stick cooking spray. Stir about half way through cooking time and then top with remainder 1/2 cup of cheese
    Bake uncovered for 30 minutes. Sprinkle with chives if desired
