    List of Ingredients




    Preheat oven to 350 and buter a deep 1 1/2 qt casserole

    1 1/2 to 2 pounds ripe tomatoes (4-5 medium)
    4 TBS butter
    2/3 cup chopped green pepper
    1/2 cup chopped onion
    2/3 cup bread crumbs
    1/2 tsp salt
    1/4 tsp pepper

    Peel and slice tomatoes 1/3 inch thick

    Melt butter in frying pan and saute the onions and peppers until soft, but not browned. Add crumbs, salt and pepper.

    Layer the tomatoes and the crumb mixture, starting with tomatoes and ending with crumbs. Bake uncoverd for 35 to 40 minutes until tomatoes are soft and crumbs are browned.

    You can add some parmesan to each layer too.

    This recipe can be adjusted to however many you are feeding
