    List of Ingredients




    3 Tbs olive oil, divided
    2 cups of butternut squash, peeled and cut into chunks(used more)
    3 pounds of ground turkey( used cooked chicken chunks)
    3 Tbs chili powder( used 2)
    1 Tbs ground cumin( used 1/2)
    1 cup of tomato sauce
    2 cups of dark beer( used Amstel light) 1 bottle
    1/2 cup smoky barbecue sauce (used 1/2 cup regular)
    2 Tbs of worcestershire sauce( 1)
    1 large onion, minced
    2 sweet peppers, chopped( used roasted)
    2( 15-oz cans of pinto beans, drained) I rinsed as well and used only (1 can)
    Hot sauce to taste( did not use)
    Salt to taste
    2 cups of frozen corn, thawed( 1)

    Recipe



    Saute the squash in( 1 Tbs )of the olive oil and transfer to a large pot. Cook the turkey in the remaining olive oil. Add to the squash and mix in the remaining ingredients except for the corn. Bring to a boil and cook covered for 30 minutes. You can add some water if necessary. Stir in the thawed corn and serve immediately. Yields about 15 servings.

    I sauted the onion before adding to the squash and I also added some chopped green chilies to the chili as well. I processed some of the mixture minus the chicken and added it back into the chili to slightly thicken it up a bit~ awesome~

    The cornbread was perfect with this.
