    This serves four, but can be easily halved or doubled

    List of Ingredients




    4 chicken breasts cooked in microwave till just done.
    Mix one pkg. beer batter fish fry mix or make a tempura batter.
    dip cubed chicken in batter and deep fry till golden brown.

    Sauce:

    In a sauce pan add:
    2 tbs. peanut or olive oil
    1 tsp. minced garlic
    1 tsp. ginger (or to taste- I don't care for much but DH does)
    3/4 C. red wine vinegar
    1 C. sugar
    1 C. ketchup
    1 C. orange juice
    2 Tbs. corn starch.

    Recipe



    Mix thoroughly until corn starch is mixed in.
    Heat to boiling stirring until glossy and thick. Turn off heat.
    Add the following to the sauce.
    2 whole carrots, peeled and sliced and microwaved three minutes.
    1 Green pepper, cut into one inch squares and microwaved for one minute.
    (May add a little red pepper if you have it)
    1 can pineapple, drained or one cup fresh pineapple
    1 tomato cut into eighths.
    Add to the sauce and bring back to a boil. Arrange Chicken on a platter and ladle sauce over it. Serve immediately. Good with white rice or noodles.
    If you like it a little more tart
    add an additional 1/4 C. vinegar.
    One time I was out of orange juice and used Hawian Punch. That was pretty good too, but we like the orange flavor that comes through.
    This doesn't really take as much prep time as it may look. I do the vegies while I am deep frying the chicken.
