Bette's Lemon Bars

List of Ingredients
Crust:
1/2 c. (1 stick) plus 1 T. cold butter
3/8 cup packed brown sugar
1 1/2 c. all-purpose flour
1/2 t. salt
Lemon Filling:
5 eggs
1 cup plus 2 T. granulated sugar
1/3 c. all-purpose flour
3/4 t. baking powder
1/4 t. salt
1 T. grated lemon zest
1/2 c. fresh lemon juice
sifted powdered sugar for sprinklingRecipe
Crust: Preheat oven to 350 F. Combine all the crust ingredients in a food processor and process until small crumbs form. Or, to make by hand, combine the brown sugar, flour and salt in med bowl. Using a pastry cutter or 2 knives, cut in the butter until small crumbs form. Press the mixture into the bottom of a 9x13" baking pan and bake in the preheated oven 15 min, or until set. Let cool while making the filling.
Filling: In lg bowl, combine eggs and sugar and beat for 3-5 min, or until very pale and thick. Sift the flour, baking powder and salt together and fold into the egg mixture. Add the lemon zest and lemon juice and fold in until blended. Immediately pour the filling on to the crust, spread evenly, and bake in preheated oven for 20 min, or until lightly browned. Let cool to room temp in the pan. Using a knife, that has been dipped in hot water, cut into 12 bars. To serve, sprinkle the lemon bars with powdered sugar.
