Pumpkin Cheesecake Crumble Squares

The filling is very light with just a hint of pumpkin and ginger. I loved the cookie~oatmeal/nutty crust. It tasted like a great granola cookie. It baked perfectly and cut beautifully into small squares for serving. I baked it in a different size dish and it worked very well. Creating more little tasty, creamy, crunchy bites~
1 cup of flour
3/4 cup of rown sugar
1/2 tsp salt
1 stick of butter, cut into small cubes
1 cup of pecan halves
3/4 cups of oats
Proccess the first 4 ingredients.Add the pecans, process again. Add the oats. Press 3-1/2 cups of the mixture into a buttered 9x9" pan.
I used an 8x11 and it worked fine.
Transfer the remaining crumbs to a cookie sheet and bake for about 10-12 minutes at 350 degrees.
Remove and set aside. Bake the prepared crust for about 30 minutes. I baked mine for about 25 minutes.
Prepare the filling while the crust is baking
Filling ingredients( Blend all and Mix well)
8-oz cream cheese
3/4 cup of pumpkin
1/2 cup sugar
1 large egg
1/2 tsp cinn
1 tsp ginger
Spread over the warm crust and bake for 20 minutes. I baked mine a little longer due to the larger pan size about 25-30 minutes
Topping( Mix all well)
1 cup of sour cream
2 Tbs sugar
1/4 tsp vanilla
Spread over hot filling and sprinkle the whole top with the reserved crust topping
