List of Ingredients
Dough:
1 cup sugar
1 cup brown sugar
1 cup shortening
3 eggs
3 cups flour
1 tsp. vanilla
1/4 tsp. salt
1 tsp. baking soda
1 tsp. cream of tarter
Mix the above ingrediants together, wrap in plastic wrap and chill in the freezer for a couple of hours.
Recipe
Filling:
2 cups chopped dried cherries
1 cup sugar
1 cup water
1 cup chopped walnuts (optional)
In a sauce pan, combine the above ingrediants and bring to a boil and cook for 2 minutes. Turn off heat and cool completely. Filling will be fairly thick. If too thick to spread, add a little more water to thin out.
Roll the dough into a circle. Spread the filling onto the dough. Fairly thin. Roll the dough and again wrap in plastic wrap and put in freezer.
Cut cookies approximately 1/4 inch thick and bake in 350 oven for 10 minutes or until golden brown. It is easier to cut the cookies when the dough is frozen.
This cookie filling may be made with dates, dried cranberries, and I've used dried pineapple. The red fruits are very pretty on a Christms cookie tray.
