Recipe Introduction
Pip_OH
I got this reciep from foodfit.com. They are called Happy Jack Cookies on their site, as in Jack O Lantern. They are very good!
I used my small Pampered Chef scoop and got 43 cookies. There are NO EGGS in this recipe.
My changes: I did add about a 1/4 tsp of baking powder because I like a puffy cookie, and I used 1/8 tsp cloves instead of allspice, because I didn't have any, and I used regular raisins because it's what I had
List of Ingredients
3/4 c pumpkin puree
3/4 c light brown sugar
1/2 c plain low fat yogurt
2 TBS vegetable oil
1 tsp vanilla
2 C Cake four, sifted
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp ground ginger
1/4 tsp all spice
1 c golden raisins
Recipe
Preheat oven to 350. Lightly spray 2 baking sheets with no stick spray. In a large bowl whis together the pumpkin, yogurt, oil, sugar and vanilla. In another bowl sift together all of the dry ingredients. Mix into the wet mixture until well blended. Fold in raisins. Drop by the tablespoon full onto the prepared baking sheet leaving about an inch and a half between each cookie. Bake until golden brown 10-15 min
