Thick 'N' Chewy Chocolate Chip Cookies

List of Ingredients
1 cup butter, softened
1 cup shortening
1 1/2 cups white sugar
1 1/2 cups brown sugar
4 eggs
2 teaspoons vanilla extract
1 teaspoon salt
2 teaspoons baking soda
4 cups all-purpose flour
1 cup nuts, finely chopped (preferably walnuts or pecans)
12 ounces semisweet chocolate chipsRecipe
Mix as for cookies. Portion out with a #40 scoop (or teaspoon) onto cookie sheets and bake at 365 for exactly 11 minutes.
You may need to adjust the temperature or baking time according to your oven--what we're after here is cookies that are still pale in the middle but brown around the edges. Take them from the oven at that stage and put the sheet on the cooling rack. (The held heat in the cookie sheet will finish baking them.) Let the whole thing sit for three to five minutes before you take them off the sheet. They will be deliciously chewy, with interruptions of crunchiness from the nuts and (if you freeze or chill them) the chocolate chips.
