List of Ingredients
1/2 of a one pound package of Jimmy Dean regular sausage( used turkey Sausage)
3/4 cup frozen corn
1-1/2 eggs, lightly beaten( used 1)
2 Tbsp. melted butter
1/2 cup water
1/4 tsp pepper
1/4 cup chopped red pepper
1/2 Medium jalapeno, seeded and minced( Used chopped green chilie)
2 Tbs thinly sliced green onions
( used the full amount)
3/4 cup white or yellow self-rising cornmeal
1 Tbs chopped cilantro( optional)
Recipe
Cook the sausage, Remove from the heat and add the corn. Set aside.
( I drained the meat first)
Combine the eggs,melted butter, water, pepper, red pepper, jalapeno, onion and optional cilantro. Stir well. Add the sausage mixture and cornmeal;. stir to blend. Spray a griddle pan with non stick spray and add 2-3 Tbs of remaining butter.
( Just used olive oil) No Butter
Allow 1 rounded Tbs per cake and place onto the hot griddle. Cook 2-3 minutes on the first side, flip and cook for an additional 2 minutes.
