List of Ingredients
2 Tbsp. butter,melted plus more for brushing pans
6 oz.bulk pork sausage
3/4 cup yellow cornmeal
1/3 cup flour
2 tsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk
1 egg
1 cup frozen corn kernels,thawed
3/4 cup grated cheddar cheese
1/2 cup chopped scallion greens
1-2 Tbsp. chopped pickled jalapenos
Recipe
Preheat oven to 450F and lightly grease two mini
muffin tins with butter.Cook sausage in skillet over med. heat,stirring and breaking up lumps till done.Remove from heat and cool.Whisk together the cornmeal,flour,sugar,baking powder,baking soda and salt in a large bowl.Whisk together the buttermilk and egg in a med. bowl.Whisk buttermilk mix into cornmeal mix till just combined.Fold in corn,cheese,scallions,jalapenos,melted butter and sausage.Spoon about a heaping tablespoon of batter into each muffin cup and bake coins till golden brown on top,10 min.
