    List of Ingredients




    6 medium carrots -- cut 1/2" thick
    1/2 cup green pepper -- chopped fine
    1/2 cup onion -- chopped fine
    4 chicken breasts -- boneless & skinless; strips
    1/2 teaspoon salt
    10 ounces Sweet & Sour Sauce -- (jar)
    15 1/2 ounces pineapple chunks in juice -- drained
    3 tablespoons cornstarch
    3 tablespoons cold water

    Recipe



    Put carrots, green pepper and onion in the crockpot; top with chicken strips and sprinkle with salt.

    Pour sweet and sour sauce and pineapple over all.

    Cook on low 7-8 hours.

    Remove chicken, keeping it warm.

    Cover; cook on high 10-15 minutes or until thickened.

    Season to taste and serve over rice.

    Blend cornstarch and water, stir into juices in crockpot.
