Aunt Sadie's Fabulous Pound Cake

2 cups cake flour
1 tsp. baking powder
2 tsp. unsweetened cocoa powder
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 cup (2 sticks) unsalted butter, softened
1 cup sugar
1/4 cup milk
1 T. brandy
1/2 tsp. vanilla extract
4 large egg whitesRecipe
Preheat oven to 350º.Grease and flour a 9"x5"x3" loaf pan.
In a medium bowl, sift together the flour, baking powder, cocoa, salt, cinnamon, and nutmeg.Set aside.
In a large bowl, on the medium speed of an electric mixer, cream the butter and sugar until fluffy, about 3 minutes.Add the dry ingredients in two parts, alternating with the milk, beating well after each addition.Add the brandy and vanilla.
In a separate bowl, on the high speed of an electric mixer, beat the egg whites until soft peaks form.Gently fold into batter, making sure no streaks of white are showing.
Pour the batter into the prepaed pan.Bake 45-55 minutes or until a cake tester comes out clean.Let cake cool in pan 20 minutes.Remove from pan and cool completely on a wire rack.
Serves 8-10.
