List of Ingredients
6 caramel apples
1 cup water
1 cup granulated sugar
1/2 cup whipping cream
6 Red Delicious OR Golden Delicious apples
3 oz white chocolate, finely chopped
3 oz semi-sweet chocolate, finely chopped
1/4 cup coarsely chopped natural pistachios
small red cinnamon candies OR other small candy
gold leaf, optional
Recipe
In heavy-bottomed saucepan, combine water & sugar. Over low heat, stir mixture gently until sugar is completely dissolved. Increase heat to med-low; cook, without stirring, until mixture is a dark amber color. Remove from heat; carefully stir in cream. Set aside until barely warm & thickened.
Insert popsicle sticks or small wooden spoons into bottom center of apples.
Cover top of 10" square piece of styrofoam with waxed paper.
Dip tip 1/2 of each apple into thickened caramel; stand caramel-topped apples in styrofoam, allowing caramel to run down sides. Refrigerate to harden.
Meanwhile -- In top of double boiler, melt white chocolate, stirring until smooth. Transfer melted chocolate to pastry bag fitted with small writing tip. Drizzle thin, random lines of melted chocolate over each apple. Repeat melting & drizzling with semi-sweet chocolate. Decorate each apple with pistachios,small red cinnamon candies & small pieces of gold leaf, if desired.
