    List of Ingredients




    1 quart canned zucchini or 1 quart fresh zucchini slices, peeled
    1 cup flour
    3/4 cup rolled oats
    1 cup brown sugar
    1 tsp cinnamon
    ½ cup margarine
    2 tbsp cornstarch
    1 tsp vanilla

    Recipe



    Mix flour, rolled oats, brown sugar, cinnamon and margarine until crumbly. Press half into a greased 9" square pan. In a sauce pan, empty the quart of zucchini or fresh zucchini. If using fresh zucchini, add ½ cup apple juice. Heat until simmering. Mix cornstarch into the juice. Add vanilla. Add more brown sugar and cinnamon if needed. Stir until thick and clear. Pout into pan and sprinkle with remaining crumb mixture. Bake at 350 degrees for 35 minutes or until light brown. Serve with whipped cream or cool whip. Yield: 8 servings.
