Banana Flax Muffins Or Bread

Posted by: chefly*******I made these as muffins but baked them for 30 min. at 375 F. not 350 F. They are hearty muffins with good banana flavor. DH likes them a lot. I would like a little oil added, maybe 3 Tbsp. to make them a bit more tender. They are packed with nutrition. My changes are in parenthesis
List of Ingredients
10 servings
2 cups organic whole wheat flour
1/2 cup Splenda brown sugar blend (equivalent amount in stevia)
1 cup Hodgson Mills ground flax seeds
2 large eggs
1 teaspoon baking soda
1/2 teaspoon salt
4 overripe bananas (2 cups)
(1/4 tsp. ground nutmeg and ground cloves and 1/2 tsp. ground cinnamon)
Recipe
1. Mash bananas and mix with other ingredients.
2. Pour batter 3/4 full into muffin (I filled 12 muffin cups)or loaf pans.
3. Bake at 350°F for 40 min. for muffins and/or 50 min. for loaf pans. Due to differences in ovens and elevations, check bread with a toothpick periodically after approx. 35 minutes. When toothpick comes out clean, bread is done.
