1/2 c. thinly sliced onion
2 T. chopped green onion
2 garlic cloves, minced
2 t. olive or canola oil
1 lb. boneless beef sirloin steak, cut into thin strips
1/3 c. white wine or beef broth (I used beef broth)
3 c. broccoli florets
2 c. sliced fresh mushrooms
1 T. cornstarch
1/8 t. black pepper
1 c. beef broth
2 T. balsamic vinegar
Hot cooked rice, optional (I used brown rice--not included in nutrition info)
Recipe
In large nonstick skillet or wok, stir fry onions and garlic in oil over low heat until tender. Add beef; stir fry over medium heat for 5 to 7 minutes or until meat is no longer pink and onions are golden. Using slotted spoon, remove meat and onions; set aside. Add 1/3 c. wine or broth to pan; stir to loosen browned bits. Add broccoli and mushrooms; stir fry over high heat until broccoli is tender. In a bowl, combine cornstarch and pepper; stir in 1 c. broth and balsamic vinegar until smooth. Add to the pan. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in beef and onions; heat through. Serve over rice if desired. Yield: 4 servings. Each serving (1 cup) has: 248 calories, 9 g fat (3 g sat fat), 87 mg cholesterol, 297 mg sodium, 11 g carb, 2 g fiber, 28 g protein. 5 WW PPS using these figures (which came from Reiman Publications, not me). Diabetic exchanges: 3 lean meat, 2 vegetable, 1/2 fat. (Plus you would have to count the carbs if you eat rice with it.
