List of Ingredients
In a large pot put 1c. olive oil, then add the following.
1 large cauliflower, chopped fine
2-14oz. cans black olives, drained and chopped
2-12oz.jars green olives, chopped and drained
2 -12oz. jars pickled onions, chopped and drained
Cook for 10 minutes then add
2 large green pepper, chopped
1 large red pepper, chopped
2-10oz. can mushroom pieces, chopped and drained
1-48oz. jar sweet pickled, bread and butter, sweet mixed or yum yum, drained and chopped
10c. ketchup
Recipe
Simmer 10 minutes then add 4 cans chunk tuna in water, drained. Stir well and then put into jars and process.
I always make sure to use jars that I know I can tell if they are sealed or not. Pressure canning would be better. I have frozen this already too and it is good. You could easily cut this batch in half.
Serve with crackers.
I've often wondered how something like this would work as a pasta sauce. I would probably substitute tomato sauce for the ketchup and serve it with some type of larger pasta like penne or ziti or gemelli. Have you ever done anything like that?
