List of Ingredients
10 hard cooked eggs,chopped
3 ribs of celery, 1/4" dice
2 scallions with 2" of green left on, thinly sliced
2 tsp finely minced jalapeno( used chopped green chilies)
1 tsp minced garlic
1/2 cup red pepper, 1'4" dice
1 cup grated cheddar cheese( used slightly less)
1 cup mayonnasie( used slightly less)used Light mayo
1 Tbs fresh lime juice
2 tsp cumin( used less)
2 tsp chili powder( used less)
salt and pepper to taste( pepper only)
1 Tbs chopped flat leaf parsley for garnish
Recipe
Place first 7 ingredients together. Toss with a fork to blend. Combine the mayo, lime juice, cumin, chili powder in a small bowl. Mix and then gently add to the egg mixture. Saeson with salt and pepper. Chill covered for 4 hours. Garnish with parsley before serving.
I toasted scoops in the oven @ 325 for about 6-7(?) minutes. Cooled, then stuffed with the salad mixture. Sprinkled each one with some parsley~ They went like hot cakes~ This is a very chunky, power packed recipe for egg salad~ The scoops worked perfect~
