Posted by: bagelbaker_OH************back in the early 80's, my mom got the copycat recipe for the batter fried fish like Arthur treachers. It really tastes just like it!! We all enjoyed it so much! This recipe makes quite a few pieces of fish, so depending on the size of your family, you may want to cut it in half
List of Ingredients
1 tsp sweet basil
1 tsp pepper
1/2 tsp garlic salt
2 1/2 to 3 cups of pancake mix
1 quart of club soda
Recipe
mix all together...should have the consistency of buttermilk.
chose a FIRM WHITE FISH
heat fryer to proper deep fry heat (best done in a fryer with basket, but you can do it in a regular saucepan if you like) just be sure oil** is the proper temperature.
350-375 deg.
pat dry your fish pieces, using tongues, dip into batter and drop into fryer. It should take about 3-4 min for the piece to be done. place on paper towels when done and serve immediately
**Peanut oil is good, as it has a high smoking point and thus does not burn easily even at high temperatures. Vegetable oils such as canola and corn oil are also good choices
