List of Ingredients
8-9" pie crust brushed with egg whites, baked and cooled
Meringue:
2 egg whites
1/4 tsp. cream of tartar
6 packets Equal (NutraSweet as sweet as 2 tsp. sugar each)
1/2 tsp. vanilla
Pudding:
2-3/4 cups 1% milk
2 tsp. vanilla
1 large package (6 serving size) vanilla sugar-free instant pudding
Optional Topping:
3 T. whipping cream
1/2 packet Equal (NutraSweet as sweet as 1 tsp. sugar)
1/4 tsp. vanilla
Recipe
Meringue:
Beat egg whites until frothy.Beat in cream of tartar until peaks form and curl over.Without over beating, blend in each packet of Equal.Beat in vanilla.Set aside.
Pudding:
Stir vanilla into milk.Beat in pudding mix.Gently fold the meringue into the pudding.Pour into pie shell, and refrigerate until set, about 2 hours.
Topping (optional):
Just before serving, prepare topping. Beat whipping cream until it begins to hold a form. Then add Equal packet and vanilla, and beat until stiff. Top each slice as garnish.
