I posted a while back, looking for "fluffy' po's like restaurants make. I searched here on the 'search, also. So, this is what I did. I boiled 3 med. size russet po's for 30 min. Then on one, I rolled in butter, another I rolled in bacon grease, another I rolled in canola oil. I sprinkled all with kosher salt. I put on a preheated baking stone, that was in oven at 500 degrees for the half hour they were boiling. I turned the oven down to 400 degrees. I put them on the stone, and turned them after 30 minutes. Let them cook another 30 minutes.Recipe
Hands down winner was the one rolled in butter. All of them turned out VERY FLUFFY- like I was searching for. Will do ALL of my baked po's this way from now on.
