Eggnog Butter Cake
½ c softened butter
¾ tsp salt
1 1/3c sugar
1 ½ c eggnog
2 lg eggs
2 tbsp water
1 tsp ea vanilla and rum extract
3 c sifted cake flour
2 ½ tsp baking powder
Beat butter until creamy; gradually add sugar, beating until light and fluffy. Add eggs 1 at a time beating well. Blend with flavorings. Sift together flour, baking powder and salt. Add to butter mixture alternately with 1 cup eggnog. Add water beating until smooth after each addition. Turn into greased and floured 10” tube pan. Bake at 350º for 30-35 minutes or until done with pick. Cool for 15 min.
EggNog Icing
Combine 3 tbsp eggnog, 2 tbsp light corn syrup and ½ tsp rum extract. Gradually add 2-3/4 c powdered sugar. Beat until smooth. Decorate with candied red and green cherries.
